In a oven save large skillet (cast iron or similar) melt the butter over medium-high heat.
Add in the minced garlic to the melted butter and stir for a minute or so until fragrant.
Add in the lemon juice and lemon zest and stir to combine.
Place the cod filets in the mix and sprinkle with about half of the salt and pepper. Cook for about 1 minute.
Flip the filets and cook for an additional minute.
Transfer the entire pan to the oven and broil for 6-9 minutes or until the fish is cooked through and flakes apart. It will also be a golden brown when done.
Serve with a garnish of parsley on top of each piece of cod.
