Made in just 30 minutes in the air fryer these apricot-glazed chicken thighs are an easy weeknight dinner. Covered in a sticky sweet glaze that caramelizes when cooked, these thighs pair deliciously with any keto side dish.
Season the chicken thighs with salt and pepper to taste, and put into a baking dish or tray that fits into your air fryer.
Air fry for 10 minutes.
While the chicken is cooking, add the remaining ingredients to a saucepan over medium heat, and simmer until well combined and thickened. Remove, and set aside.
Remove the chicken, flip over, and air fry for another 6-8 minutes until cooked through completely.
Brush the chicken with the glaze, and air fry another 2-3 minutes to caramelize.
