Ingredients You Need:
Ground Sausage: we used a good breakfast sausage but you could also use a good ground Italian sausage.
Ground Chicken: I like using chicken as it just makes this meal a little lighter. But you could use ground turkey or beef if you wanted.
Chili Seasoning: we used a lower-carb pre-packaged pack but you could mix your own to get even less carbs.
Chicken Broth: we used a low-sodim chicken broth however you could also use vegetable broth. If you are using ground beef as your meat beef broth would work as well.
Green Bell Pepper: we used green as they are normally lower in sugar than the brighter colored peppers.
Onion: no fancy onions are needed a good old-fashioned yellow onion works just fine.
Tomato Sauce: be sure to use a low-carb version as normal ones can be loaded with extra sugar.
Zucchini: while you could use frozen in a pinch, it works best if you fresh zucchini for this recipe.
How To Make This Keto Chili Recipe:
- Add chicken and sausage to a skillet and cook. If it is really greasy when done drain, if only a little grease leave it.
- Dump cooked meat in the slow cooker add the rest of the ingredients and stir it.
- Place the lid on the cooker and cook on high for 4 hours or low for 6-8 hours.
Expert Tips To Make It:
It will depend on how fatty your sausage is but if there is only a few tablespoons of grease in the pan after you cook it I like to just add it in. It gives great flavor and adds fat.
However, if you have a lot you will want to drain most off before adding it to the slow cooker.
If needing to feed a house full, this recipe can vary easily be doubled and even tripled. This is also great if you want to freeze servings for quick meals later.
If cooking on high for 4 hours the zucchini will still have a slight crunch to it. If you want it even softer just cook it a little longer.
How To Serve:
This is great served as a stand-alone dish topped with a little cheddar cheese or sour cream.
However, if you are looking for ideas of sides you can serve with it here are a few great options.
