Making a keto version of Almond Joy candy bars is surprisingly simple and delicious! You just need a handful of Almond Joy Ingredients to whip up a batch!

We made ours as round cups more like almond joy bites as I found it easier to measure everything out more equally in a mini muffin pan. However, if you wanted it to look more like a normal bar, you could form each measured-out coconut mixture by hand into a bar shape.

Almonds: When it comes to the crunchy almonds you can use salted or unsalted raw almonds or roasted. You just want to make sure not to use ones that have been sweetened. You also want to use whole almonds and not sliced or pieces.

Unsweetened Coconut: you will want to use shredded coconut or coconut flakes. Just be careful to make sure it is not sweet coconut.

Vanilla: pretty sure vanilla is in just about any good sweet treat. Something about that hint of vanilla just brings all the flavors together.

Allulose: we used allulose as our keto-friendly sweetener of choice as it is one that is a little kinder on the body. However, feel free to use your favorite low-carb sweetener. Just keep in mind that any adjustments you make to the recipe may change the carb count.

Coconut Oil: coconut oil kind is kind of like Crisco texture until it is heated then it turns to more of an oil.

Sugar-Free Dark Chocolate Chips: while you could use milk chocolate chips if you wanted, dark chocolate really packs the best punch when it comes to chocolate flavor in almond joy ingredients.

Coconut Cream: this should be used at room temperature and you want to make sure it is mixed up before measuring it out. Sometimes if it has been stored in a cool place all the coconut fat can harden at the top. You also want to make sure you get a brand that is not sweetened and that it is cream and not coconut milk.

MCT Oil: while this one is optional, I find it helps to melt the chocolate more smoothly. It also is a great way to add in some extra healthy fats.

How To Make Keto Almond Joy Candies:

  1. In a large mixing bowl mix the coconut, melted coconut oil, vanilla, allulose, and coconut cream until fully mixed.
  2. Next, evenly divide the mixture into 24. I pressed mine into a mini silicone cup mat.
  3. Then lightly press a whole almond into the center top of each coconut mixture.
  4. Place into the fridge to chill and firm up. They are easier to coat in chocolate when they have hardened.
  5. Over a double boiler or in a chocolate heater, add the chocolate chips and MCT oil if you are using it. Carefully stir until you fully melt chocolate and mix it.
  6. While that is heating line a cookie sheet with a silicone mat or a piece of parchment paper.
  7. Remove pieces from the fridge and quickly dip and coat each piece in the hot chocolate shake off excess chocolate then place on the baking sheet to cool. You will want to be fast with this step. If you leave the coconut mix in the hot chocolate too long it will start to get mushy and melt.
  8. Allow to cool and firm up (you can place the sheet in the fridge to speed up if you want). When hardened, move to an airtight container and store in the fridge.

Expert Tips For This Almond Joy Recipe

We just used shredded coconut to make our mix if you want yours finer like the texture of an almond joy’s sweet soft coconut you can run the coconut through a food processor or grinder before mixing it into coconut filling. This will give you more of a creamy coconut texture.

If you have trouble with things melting when coating in the chocolate as you do have to do it fast, you can just pour the chocolate over each piece. Then when it is harder, turn them over and pour over the bottom.

Storing Suggestions For Homemade Almond Joy Candy Bars

These taste best when they are a little softer and have been brought to room temperature. However, they should be stored in an airtight container and kept in the fridge for up to 2 weeks.

The homemade almond joy bars can also be frozen for longer storage. When ready to use remove a few from the fridge or freezer and place them on the counter for about 30 minutes before serving.

A. While this does work for normal chocolate chips and they easily turn to melted chocolate, I find the sugar-free ones are a little tricky. I have found they get more crumbly when heated in the microwave.
