2cupsUnsweetened coconut
2tspVanilla extract
4TbspAllulose
5Tbspcoconut oil
24Whole Almonds

Instructions
In a large mixing bowl mix the coconut, melted coconut oil, vanilla, allulose, and coconut cream until fully mixed.
Next, evenly divide the mixture into 24. I pressed mine into a mini silicone cup mat.
Then lightly press a whole almond into the center top of each coconut mixture.
Place into the fridge to chill and firm up. They are easier to coat in chocolate when they have hardened.
Over a double boiler or in a chocolate heater, add the chocolate chips and MCT oil if you are using it. Carefully stir until you fully melt chocolate and mix it.
While that is heating line a cookie sheet with a silicone mat or a piece of parchment paper.
Remove pieces from the fridge and quickly dip and coat each piece in the hot chocolate shake off excess chocolate then place on the baking sheet to cool. You will want to be fast with this step. If you leave the coconut mix in the hot chocolate too long it will start to get mushy and melt.
Allow to cool and firm up (you can place the sheet in the fridge to speed up if you want). When hardened, move to an airtight container and store in the fridge.
