In a blender or tall container and immersion blender, combine the egg, lemon juice (or vinegar), and salt. If you’re using mustard or any additional spices, add them now. Blend these ingredients briefly to mix.
With the blender or immersion blender running on a low speed, very slowly drizzle in the oil. Gradually increase to a thin, steady stream. It’s crucial to pour slowly to ensure the mixture emulsifies properly.
Continue blending until the mixture thickens to your desired consistency.
Transfer the mayonnaise to a clean jar with a lid and store it in the refrigerator.
