Preheat the oven to 400 degrees. Line your baking sheet(s) with parchment and set aside.
In a small bowl, combine the shredded cheeses and mix to combine.
Using a teaspoon, measure out even sized mounds of the cheese and place at least 3 inches apart on your prepared baking sheets.
Cook in the preheated oven for about 6 minutes – the cheese should be melted and the edges slightly browned. Watch carefully as the time gets close – they can go from slightly browned to burnt very quickly.
Remove from the oven and sprinkle with the Italian seasoning, if desired.
