4ozCotija cheese1 cup grated on a box grater (or cheese of choice)
1/4bunch cilantrocoarsely chopped
1/2small purple cabbage2 cups shredded
1large avocadopitted, peeled and diced
1/2red oniondiced
1limecut into 8 wedges
8zero carb tortillassmall, 6” diameter
Taco Sauce
3/4tspgarlic powder
1/3cupsour cream
1/3cupmayonnaise
3/4tspSriracha sauceor to taste
1 1/2Tbsplime juicesqueezed from 1 medium lime
Instructions
Completely thaw the shrimp. Pat them dry with a paper towel. Place the shrimp in a large bowl. Add the minced garlic and seasonings and mix well.
Heat a large pan over medium-high heat. Add the shrimp and sauté them for approximately 2 minutes per side or until they turn pink to red. Move cooked shrimp to a bowl or platter.
Toast the tortillas until golden brown.
Slice the cabbage very thin, chop the cilantro, dice the red onions, and dice the avocados. Arrange all the toppings on a large platter or in individual bowls.
Prepare the taco sauce by mixing all the ingredients together. Serve the sauce drizzle on or alongside the tacos.
Assemble the tacos with shrimp, sauce, and your favorite toppings then enjoy!
