Ingredients Needed to Make Keto Cinnamon Bread:

Almond flour: make sure to use almond flour and not almond meal. Almond flour is blanched and provides a smooth texture and light, beautiful color to baked goods. The almond meal won’t blend as well into the cinnamon bread.

Swerve brown sugar substitute: a little goes a long way with this keto-sweetener. You’ll use it in both the cinnamon bread as well as the dusting on top.

Eggs: try to let your eggs come to room temperature before using them.

Butter: melt the butter before mixing it into the batter so that it mixes evenly with the other ingredients.

Xanthan gum: this helps bind the ingredients and hold the keto cinnamon bread together.

Cinnamon and vanilla: if you’re a cinnamon lover, add a hint more. Know that the higher the quality of your vanilla extract, the more flavor will come through.

Baking powder: to help the bread bites rise and give them a cloud-like texture.

How To Make It These Bread Bites:

  1. Mix together all the ingredients in one big bowl until completely smooth.
  2. Grease a mini muffin pan and spoon the keto batter into the individual sections. Make sure not to fill them all the way.
  3. In a small bowl, mix together the topping ingredients.
  4. Sprinkle the cinnamon sugar topping over the raw bread bites evenly.
  5. Bake in the oven for 15 minutes or until browned.

Expert Tips To Make It:

Make sure that the bread bites are cooked through before removing them from the oven. They should be slightly brown all over.

You can make the cinnamon bread bites as small or large as you like you’ll just need to adjust the cooking times. However, changing the size other than what we have listed will also change the net carbs per serving.

Serving The Keto Cinnamon Bread Bites:

The best part about these bites is that they can be made into just about anything you like.

Pair them with coffee as-is for a rich pick-me-up or serve them with a side of fruit and have a delicious flavor combination of indulgent and refreshing.

If you want to make them ultra-rich and into dessert, you can also top the cinnamon bread with a keto frosting or a cream cheese frosting after they’re baked to make them very similar to frosted donut bites.

To top them with frosting, make sure you let them cool fully first so that the frosting doesn’t melt as you spread it on.

Storing Them:

You can store this keto cinnamon bread in the fridge for up to 5 days. Let them cool fully first before placing them in an airtight container. To enjoy them, let them come back to room temperature. Or pop them in the microwave for a few seconds to heat.

If you freeze the cinnamon bread bites, make sure to lay them flat in a container so that they don’t stick together. Or separate layers with parchment paper. Thaw them in the fridge when you’re ready for them.
